this is normally due to your video card and video monitor driver, it limits how many settings you will have available. If you selected a "generic" monitor that will limit you, and if your video card driver wasn't loaded and thus a "generic" low res driver was installed as a default.
Try the monitor setting first, then load a new driver for your video card if you have the original driver disk (or go find it on the web).
